Snappy Saturday: Mug cakes and big ole salad bowls

I ran my taper run this morning. Taper is a blessing and a curse because I’ve been on a running high (mileage) lately but now it’s time to wind that down because the 26.2 is coming soon. I wanted to run more but I stopped for many reasons. I’m kind of battling some fatigue right now too.

This week I attempted the to make my first “brownie” in a mug. It’s one of those things I don’t feel horrible about eating when I want a little extra treat in my life. I made this sucker several times. The first time didn’t turn out too well. I ended up trashing it and ate a quest bar instead. I originally made it in the mug and I didn’t mix everything together well enough.  It was a DUMPSTER FIRE! It wasn’t very tasty.  I thought about it the entire next day and I thought I would tweak the ingredients to work with what I wanted.  So the next night I wanted to try again.

The second time came out much better. I had to tweak it to work for me. This is what you’ll need:

2 tbsp oat flour
1 tbsp cocoa powder
2 packets stevia (I used Pure Via)
1/4 tsp baking soda
3 tbsp yogurt (pick your own flavor or kind. I used strawberry greek)
2 tbsp almond milk
1 larger size mug

1. Mix all the dry ingredients together in a bowl.
2. Add the wet ingredients and mix well. Make sure you get all of it mixed well.
3. Pour the mixture into a mug.
4. Put the mug in the microwave for 1-2 minutes. Time depends on the consistency. Mine was in for 1 min 20 seconds. I liked the consistency.
5. Enjoy!

This combo worked well for me.  It tasted delicious and I LOVED IT.  It’s easy to make too so it’s definitely a hit with me.

Last night I was frantically looking for a big bowl to put my salad in. Willie pulled out the normal big bowl but I told him that wasn’t going to work. I used a Pyrex bowl to eat my dinner. Willie thought that was hilarious. It worked though and my salad was soo good!

I don’t have much to report from the weekend. I’ve enjoying the weekends of not doing much because I was on the constant move earlier in the year.
