Recipe: Some carrot thing I made the other day

I hope everyone is having a good day.  I think I’m a little worn out from my workout yesterday.  I’m feeling a little lazy so I’ll take it.

My mid-week long run turned out longer than I expected. Let me tell you, I didn’t feel like I ran 8 miles until I tried to sneak those extra two in and then it felt like my feet were bricks.

Anywho, last week I ran out of strawberries for my oatmeal. I only had enough for one person’s oatmeal so I gave them to Willie because I love him so much. FYI: Make sure you buy a really fresh batch of strawberries otherwise you’re just wasting money like me. I needed something else to put in my overnight oats an d I needed it quick. I opened up the fridge and spotted some carrots and pineapples so I thought I would try something out.

Here is what you need:

1 serving of baby carrots
1/4 to 1/2 cup chunk pineapple
1 packet of no calorie sweetener. I used Pure Via.
2 tbsp of almond milk
1 tsp of cinnamon

You will also need a food processor or something to chop up the carrots really thin. I used my Ninja Prep.

Here’s what I did:

1. Put the baby carrots in a bowl and microwave covered for about 2 minutes or until soft. *If I would have had enough time I would have just put the carrots in the steamer and steamed them until soft. But I was in a hurry and had about 7 minutes before I needed to leave for work. The microwave had to do.
2. When carrots are soft enough, add all the remaining ingredients into your food processor/prepper and pulse until everything is mixed together.
3. Eat it up because it’s so good.

It was really easy and so good. I love carrots because of the color and of course the nutritional benefits. No matter how many carrots I ate, I still ended up with glasses though.

Like I said, I added this to my overnight oats. I also had some left over and for my snack I added it to my yogurt. The next day I made it again and I added it to my salad.

I honestly think this is something that Willie would love too and he hates carrots. I might have to serve it up for him to see what he thinks. It was just one of those spur of the moment things that turned out to be something I loved.
