It’s meal prep Sunday!  I hope everyone had a great weekend. I haven’t been a productive human today.  I enjoyed the peace and quiet in my house and napped on the couch and then watched the Cowboys lose a football game.  This game was not a good look for my Dallas Cowboys, but I will still root them on. Want to know what I eat in a day? Today is your lucky day because I’m going to share. I may not have talked about it a lot lately, but I still love oatmeal.  There was a mild obsession with it a while back that has become a full-blown obsession now. I love eggs! That is one thing I will never be able to deny. There’s nothing like a good omelet to start off the day…or it’s even a great way to end the day. But why is it such a great way to start the day? Because you’re meeting a lot of your nutritional needs. Remember when I told you about all the good stuff in Eggland’s Best eggs? I wanted to make something different that featured the egg and I came up with a sweet potato hash.
