Meal prep with the pressure cooker

It’s meal prep Sunday!  I hope everyone had a great weekend. I haven’t been a productive human today.  I enjoyed the peace and quiet in my house and napped on the couch and then watched the Cowboys lose a football game.  This game was not a good look for my Dallas Cowboys, but I will still root them on.

I haven’t been blogging so I know that you’ve missed my meal prep post.  These posts are helpful not because you want to see what I’m eating, but so you can have different ideas on what to cook for your own meal prep.  I always find it helpful to see what other people are whipping up in the kitchen because I am a creature of habit. I will eat the same thing week after week and not think twice about it.

I’ll keep it simple and to the point.

Breakfast used to be my JAM!  I used to be really excited about it but now I’m just meh about it.  Just because it’s not my favorite meal of the day doesn’t mean I don’t eat it.  I’ve just been trying to keep it simple.  I’ll have an egg and egg white spinach scramble and some oatmeal.  I haven’t done overnight oats in a long time.  I think I may have experienced a bit of burn out on them, so I’ve been eating these thinkThin protein oatmeals. I’ve only had two flavors: Berry Crumble and Honey Peanut Butter, which is a favorite. I chose this oatmeal over other varieties because the calories are something I’m comfortable with and the type of oats.  These packs contain a whole grain blend rolled oats, steel cut oats, and red quinoa.  I like that it’s not just quick oats or rolled oats.

My lunch game is still pretty simple.  I do use these frozen Healthy Choice Meals and Lean Cuisine meals almost every day.  It’s just easier to have it in the freezer and eat this with some added broccoli.  I’m trying out some new Healthy Choice meals this week.  I always add some steamed broccoli to every meal I eat.  No one ever died from eating more veggies and it’s just an easy way to amplify the meals.  I do love the Lean Cuisine meals but this deep dish pizza is my favorite.  And just to be transparent, I’ll probably eat these meals with a side of tater tots I made in the air fryer.

The salmon is part of the dinner.  We haven’t been eating enough fish in the house.  Let’s just say we had a bad experience with something from the fish counter a couple of months back and it hasn’t been reintroduced back into the house until now.  We will give it a try and I’ll let you know how it turns out.

Did you know I got a pressure cooker last month? I promised never to get one because I read all the horror stories, but then I then all the recipes starting rolling out.  I saw how everyone was making all this fancy food in ONE POT in LESS THAN A HOUR.  Anything that will save me time is something I need to have.  I need food that is quick to make and that is one reason why I’m ok eating the same thing week after week.  The pressure cooker has changed my world because we are now eating new things.  It’s been great.

This week we are having beef stew.  I found a recipe and gave it a whirl today.  The prep time on these meals is probably longer than the time it takes to cook.  I tasted it and it’s legit good.  I’m sure it will be good all week long.  We made it with sweet potatoes instead of regular potatoes because that’s just the kind of life we live.  This would also be a good freezer meal to heat up later.  I thought it would be a great alternative to chili which is a go-to cooler weather meal.  I am just trying to mix it up.

That is what is on the menu this week.  Simple, easy, and healthy is what I’m going for to stay on track for the new year.

Did you meal prep today?  What’s on your menu?

WIAW: A typical day of eating

WIAW: A typical day of eating

Want to know what I eat in a day? Today is your lucky day because I’m going to share. I should have shared this a while ago because a TON of people would e-mail me asking to me to make videos about what I eat in a day. I will tell you my eating habits haven’t changed much since I’ve been preggers or been on my weight loss journey. This is pretty straight on as before. I may just eat a little bit more on some days than others, AND I might want to eat some pizza little more often.…

The case of: Peanut butter and jelly oatmeal

The case of: Peanut butter and jelly oatmeal

I may not have talked about it a lot lately, but I still love oatmeal.  There was a mild obsession with it a while back that has become a full-blown obsession now. I ate oatmeal every day until I got preggers and then for some reason it has to leave my life.  I’m happy to report it’s back in my life…a lot quicker than eggs. I’ve been an oatmeal snob.  I can’t eat other people’s oatmeal unless I have the same ingredients as my special concoction, but this morning I tried something new. Introducing for the first time: peanut butter and…

Eggland’s Best Eggs are nutritious

Eggland’s Best Eggs are nutritious

I love eggs! That is one thing I will never be able to deny. There’s nothing like a good omelet to start off the day…or it’s even a great way to end the day. But why is it such a great way to start the day? Because you’re meeting a lot of your nutritional needs. Omelets are great but I thought I would give my try at frittata this morning for breakfast with Eggland’s Best large eggs. I basically took everything that was left in the fridge. We had a leftover turkey burger, onions, spinach, bell peppers, roasted potatoes and…

Sweet potato hash with an egg

Sweet potato hash with an egg

Remember when I told you about all the good stuff in Eggland’s Best eggs? I wanted to make something different that featured the egg and I came up with a sweet potato hash. To be honest, I had to use what was in the house already. Willie always tells me I’m the master of making something out of nothing, fast. Hash usually has some not so healthy things in it like fatty meats or cheeses or whatever your heart my desire but I wanted to try a more health conscious version for everyone to enjoy. Sweet potato hash with an…

Sponsored: Taste the freshness with Eggland’s Best Eggs.

I do love eggs, that is not a secret.  I became very weary of eating anything but eggs whites when we started our weight loss journey.  Willie always told me that was silly because eggs were really not that bad to eat because eggs are a great source of protein and vitamins.  Come to find out, Willie was right and there’s really no need to avoid the whole egg. That is why I was so excited when I was contacted by Eggland’s Best to talk about their eggs.  Eggs don’t have to be an ingredient in your dish, it can…

Egg White Muffins for breakfast

Egg White Muffins for breakfast

I like to share something from the kitchen every week so this week I’m sharing a super easy breakfast thing. I use to wake up every morning to make us egg white omelets. That was before I started teaching cycle at 5AM so I had to find a way to make breakfast in the morning easy and portable if needed to be. I decided on the egg white muffin because I can cook six at a time and it was a set it and forget it type of thing.   Egg White Muffins Recipe Type: Breakfast Cuisine: American Author: Angela…

Five Things You Should Do Everyday

Five Things You Should Do Everyday

I’ve been doing a lot of thinking lately about things you should do everyday. I’m sure I’m going to come up with another of these lists, but for now: 1. Set your alarm 30 minutes earlier and go for a walk.  Give your metabolism a jump start by getting a little active in the morning.  It doesn’t have to be a full on power walk but just something to get you going.  It will make all the difference. 2. Eat a good breakfast.  They say it’s the most important meal of the day for a reason.  Don’t skip it.  Skipping…

I’m loving pumpkin right now. Try it in overnight oats!

How is everyone doing this week? How is your refrigerator feeling this week? It’s Thursday so our fridge is starting to empty out which got me thinking about some things I can’t get enough of lately. I love pumpkin, Willie hates it. That’s fine. That means I can eat all the pumpkin and not have to share. September came around and everyone went pumpkin obsessed. For some reason September triggers fall in people’s mind when it just triggers extremely hot and humid weather for me. I’m longing for fall though for “cooler” temperatures and more time with my running group.…

Recipe: Some carrot thing I made the other day

I hope everyone is having a good day.  I think I’m a little worn out from my workout yesterday.  I’m feeling a little lazy so I’ll take it. My mid-week long run turned out longer than I expected. Let me tell you, I didn’t feel like I ran 8 miles until I tried to sneak those extra two in and then it felt like my feet were bricks. Anywho, last week I ran out of strawberries for my oatmeal. I only had enough for one person’s oatmeal so I gave them to Willie because I love him so much. FYI:…

It’s National Oatmeal Day

It’s National Oatmeal Day

I don’t know about you but I love oatmeal. In fact, I’ve been eating oatmeal a lot lately. Last week, all I wanted to eat was oatmeal so I proudly shamefully admit I ate oatmeal for dinner last week and tried to do it last night, but Willie stopped me. This is how much I love oatmeal! I had all of these pictures and more on my phone. Most mornings you will see me eating oatmeal. I love steel cut oats, but for time I make overnight oats almost every day. When I’m not eating oatmeal, I’m probably eating pumpkin…
