Recipe: Some carrot thing I made the other day

I hope everyone is having a good day.  I think I’m a little worn out from my workout yesterday.  I’m feeling a little lazy so I’ll take it.

Mid week long run ended up being 11 miles. It's hot. #runchat #running #ffcheckin #fitfluential #sweatpink #teamchocolatemilk

My mid-week long run turned out longer than I expected. Let me tell you, I didn’t feel like I ran 8 miles until I tried to sneak those extra two in and then it felt like my feet were bricks.

Anywho, last week I ran out of strawberries for my oatmeal. I only had enough for one person’s oatmeal so I gave them to Willie because I love him so much. FYI: Make sure you buy a really fresh batch of strawberries otherwise you’re just wasting money like me. I needed something else to put in my overnight oats an d I needed it quick. I opened up the fridge and spotted some carrots and pineapples so I thought I would try something out.

Here is what you need:

1 serving of baby carrots
1/4 to 1/2 cup chunk pineapple
1 packet of no calorie sweetener. I used Pure Via.
2 tbsp of almond milk
1 tsp of cinnamon

You will also need a food processor or something to chop up the carrots really thin. I used my Ninja Prep.

Here’s what I did:

1. Put the baby carrots in a bowl and microwave covered for about 2 minutes or until soft. *If I would have had enough time I would have just put the carrots in the steamer and steamed them until soft. But I was in a hurry and had about 7 minutes before I needed to leave for work. The microwave had to do.
2. When carrots are soft enough, add all the remaining ingredients into your food processor/prepper and pulse until everything is mixed together.
3. Eat it up because it’s so good.

It was really easy and so good. I love carrots because of the color and of course the nutritional benefits. No matter how many carrots I ate, I still ended up with glasses though.

Like I said, I added this to my overnight oats. I also had some left over and for my snack I added it to my yogurt. The next day I made it again and I added it to my salad.

I honestly think this is something that Willie would love too and he hates carrots. I might have to serve it up for him to see what he thinks. It was just one of those spur of the moment things that turned out to be something I loved.

What’s the best tasting thing you’ve made on the fly?

Giveaway: Pure Via’s stevia summer fit kit

It’s summer and it’s getting hot.  When summer hits, I suddenly become obsessed with tea and nothing else.  Do you like tea? Tomorrow is the first official day of summer, so why not spend it drinking some iced tea with some good company. I’m usually a hot tea drinker but since it’s been so hot outside, I’ve switched the the iced variety of tea. I do love to make a big batch of green tea and put in the fridge to chill. Luckily, Pure Via sent me a variety of stevia products to try out.  I’ve been having fun mixing…

Eggless Eggnog for the holidays

Eggless Eggnog for the holidays

I don’t know about you, but I love(d) eggnog. I never really paid attention to the calories or fat in this delicious holiday drink though. When I became a little bit more health conscious I had to step away from my favorite holiday drink because it just didn’t fit into my “I can make that work” factor. (FYI: I am a person who doesn’t really like to drink their calories, but I know everyone is different.) Christmas cookies and eggnog were always something I enjoyed on Christmas Eve but it’s just something I couldn’t do anymore. I may not feel…
