Meal Prep: Meatloaf all week

Hey all!  I hope you’re having a great day and enjoying the food that you’re eating.  I know I am.  I wanted to share some tips on making leftovers new again.  I know people who CAN NOT eat the same foods day in and day out.  I am not one of those people.  I am a creature of habit and it really won’t bother me to eat the same meal all week.  That’s probably why I consider meal prepping easy.

I’ve been eating the same breakfast everyday for a LONG time.  Some people can’t do that so I want to help you make the best of your meal prep.

If you want to make your left overs new, it doesn’t take much and only requires a little bit more time.  The left over I’m going to make new today is: turkey meatloaf.

I’m choosing meatloaf because you can make a large quantity of it at one time which is perfect for meal prep.  It will last all week and we can reinvent it a few different ways.  My biggest tip is don’t try to reinvent this meal for every day of the week.  Find 2-3 different variations you can live with and have the meal prepped where you aren’t eating the same variation on back to back days.  I also suggest have the meatloaf for lunch or dinner NOT both meals.  That’s a definite way to get tired of meatloaf very quickly.

The first way to have to meatloaf is obviously as the loaf.  Slice it up and serve it with a side of veggies and a starch.  I’m hesitant to say mashed potatoes because people deem those unhealthy but it’s really about the way that you make them.  There are healthier mash potatoes in the world. Serve it up with a side of corn (it’s not a bad veggie) or another veggie you will enjoy.

Day 2 of the meatloaf should definitely be a meatloaf sandwich.  I love meatloaf sandwiches.  Put it between two slices of bread or use some Flatout Bread to make it something different.  Don’t forget to dress it up with lettuce, tomato and mustard…or whatever your condiments of choice are.  Be careful with the condiments though because things like ketchup are loaded with sugar.  We use a reduced sugar version of ketchup or Willie has made his own which was better than the bottle.

The third day you could try a meatloaf quesadilla served with a side of black beans and spinach. Quesadillas on a tortilla with lowfat cheese, sauteed onion and bell peppers and the meatloaf.  This sounds really good and an idea I’ll need to explore in another blog post. Or you could try the meatloaf in a salad.  That’s a great way to get some veggies and and volumize the meal. I would try a meatloaf lettuce wrap too.  The possibilities are endless.

I will do this from time to time to help you come up with ideas for different meals.  I had meatloaf on the brain today for some reason and I thought I would share some of my thoughts.
