Healthy eating with chicken: three recipes I will to try

We eat a lot of chicken, turkey and fish in our house. Red meat is limited, Willie eats it but I tend to shy away from it.  Eating lean meats is a huge part of our healthy eating plan. I’ve been trying to find some ways to enjoy chicken besides the usual ways.

This week for lunch I made a chicken soup from the Runner’s World Cookbook.  I was in a pinch because I needed a meal for the week but I didn’t have enough time slave over the stove.  I needed to use the crock pot.

I have to be honest, my crockpot has been overcooking my chicken which has left me unfulfilled lately.  I need a chicken refresh. I have done the research on the problem and found out I should a. buy a crockpot with an automatic cut off or b. just cook my chicken breast dishes for a shorter amount of time.  The crockpot is still good and I’m cheap…so I won’t be buying another one until it burns out.

It’s made me extremely sad so I’m in a need of a chicken dish refresh.

Here are some recipes I’m going to have to try:

Crispy Baked Chicken Tenders – I miss eating chicken tenders because I loved them so much.  But since I cut out the fried, fast food I haven’t consumed chicken tenders in a long time.  I will have to give this a try to fill the chicken tender void.  It looks simply enough and a serving size is 4 tenders for 172 calories.  It’s a score! Plus, it looks like something that would be easy to prep for the week.  Don’t forget about the grab and go.

Banging Good Chicken Salad – For Christmas I received the SkinnyTaste cookbook but I haven’t used it as much as I planned.  I have made about 6 recipes from the book and they have all turned out amazing.  This is one I am dying to try because it looks so good.

Roman-style Chicken – Giada doesn’t exactly have a lock on healthy cooking so there are a few things I would substitute or lessen in this recipe.  For the most part, this doesn’t seem to harmful and it’s doable.  This will make enough servings for a couple of meals for our family of two and it’s COLORFUL!  We eat with our eyes and this looks perfect!  I can’t wait to try it.
