My veggetti experience

Last week Jes and I purchased the veggetti.  I’d seen the veggetti before but I never remembered to pick it up when I was out.  We saw a commercial for it while we were eating dinner and immediately we went out to purchase one. It was a very exciting moment. I couldn’t wait to try it. So last night I tried it. The veggetti works very easily. Watch your fingers though at some points, but it’s nothing serious. I used zucchini and summer squash. It was on sale this week! It was fast and it left the veggies looking funny.…

Race Recap: Beach to Bay Marathon Relay

Race Recap: Beach to Bay Marathon Relay

On Saturday, Willie and I ran the Beach To Bay Relay in Corpus Christie, Tx with Tyson‘s family! I was nervous about this relay because it seemed like chaos. I don’t do well with chaos. Thankfully, Missy was there to make sure everyone got to their point. The biggest thing about B2B was the waiting. But at least the view was good. I was running the last leg of the relay so I did a lot of waiting around. But I got in some good chatting time with my bestie and god daughter. I also got hit in the head…

Define your happy.

Define your happy.

Happiness is relative. What makes me happy will definitely may not make you happy. What makes me happy at a certain period in time will change from day to day. If I’m longing to be outside on a beautiful and I finally get there that will definitely make me happy, but that may not make me happy everyday. It’s all about a circumstance, a moment, a smile, a joke, a song…etc. Happiness comes with it’s ebbs and flows. The one thing I do know is EVERYONE DESERVES TO BE HAPPY! What is happy? Here is the official definition of happy.…

Some eats from this week

Some eats from this week

I have food pictures to share which is totally unusual for me since I eat the same stuff most days. Here’s some things I’ve eaten this week. My new jam. I think this has become my favorite post race meal. The grilled chicken nuggets from Chick-fil-a are really really good. I just discovered them when we returned from China and I’m so glad that I did. These things are delicious with the fruit cup. No fries for me but they never seem to get it right. I always have to tell them I ordered the fruit cup and no fries.…

How important is a routine?

How important is a routine?

Do you have a routine? And how important is that routine to you? I’ve been pondering the thought of my daily routine because I’m still trying to fight getting back into my old routine. There are several good things about routines like knowing exactly what what you’re going to do every day. But routines can lead to life being bland or too boring. I like knowing that on certain days, I’m going to do a certain workout. I like not having to worry about changing that structure. I sometimes like knowing on certain nights we are going to eat certain…

A little tidbit about us on The Rachael Ray Show

There was a little update about Willie and I on The Rachael Ray Show! Apparently, we are weight loss all-stars. Here is the clip from the show: Once again, I want to thank Rachael Ray and her wonderful staff for everything they have done for us! It means the world to us to be able to share our story and keep moving in the future! We are blessed! I’m excited to see what the future will hold for Willie and I. Right now I don’t know what it is because I’m always striving to be better than I was yesterday…

Failure to finish can’t stop a Mother’s Day

Confession:  I haven’t been feeling too hot since our last hours in China!  When I got on the plane, it wasn’t good.  My stomach hurt so bad.  I didn’t really know what was going on.  I knew that being on a plane for 13 hours and then another flight after that wasn’t the way to end my stomach problems.  But it went away the by the end of the next day.  I thought things were good.  Until Friday morning, it started back again.  I spent most of the day sleeping on Friday when I should have been at work but…

Beijing Highlights

Beijing Highlights

Alrighty folks, it’s my last Beijing post!  I just wanted to hit some hot spots about our trip that I didn’t cover before.  Yes, the race was amazing and we ate some of the best food ever, but there were definitely some things I’ll never forget. The trip to Temple of Confucius was a definite highlight for me. Willie wasn’t interested in doing many tourists things and neither was I to be honest. Visiting this place was a must for me. It was so serene and pretty. We really were getting wiser by the moment just by being there. This…

Eating our way through Beijing

Eating our way through Beijing

To be honest, we were in Beijing and we weren’t really worried about eating clean.  It’s really hard to be picky about what you’re eating when you don’t speak the language and have no idea what to be asking for when it comes to food preparation.  Most meals were a victory because we navigated the system! Some places had English translations on the menu.  Others had pictures from us to choose from.  A lot of places just had menus in Chinese which meant we couldn’t eat there at all.  99% of the people didn’t speak a lick of English and…

Race Recap: Great Wall of China Marathon

Race Recap: Great Wall of China Marathon

Willie and I made two rules for this race: 1. No one gets left behind. 2. Enjoy the amazing experience. Leading up to this race, I was worried about finishing in the time limit. When we went to the course meeting and found out only 20 people out of the 110 people signed up last year finished the marathon, I was really worried about finishing the race. That wasn’t going to stop me from doing it though. Race morning was a bit hard on us. I woke up at 11:30 pm to make sure we had all our stuff together.…

Happy Saturday morning from Beijing

Happy Saturday morning from Beijing

Good morning my friends but I’m pretty sure it’s Friday evening where most of you are.  I wanted to give a little update on our trip from Beijing. First off, The Great Wall of China conquered us unfortunately. It was pretty brutal. The race was very challenging and very different from a road race. This was essentially a climbing challenge because I can honestly tell you we really only ran MAYBE a mile of the entire thing and we didn’t even make it all the way through. Officially, we made it 11 miles! Those were the hardest 11 miles of…
