Week three of meatless eating

Hello all! Yesterday was a crazy nuts day. Tropical Storm Bill dumped a lot of water on our city and was just a very scary and frustrating day. We can see clearly now that the rain is gone so I thought it would be best if I returned to the blog.

So this is week 3 of us switching to a more plant based diet and things are going well. I’ve been worried about being low energy and not being able to really live this way because I struggled with it so much before. Now with proper research and planning, I think we’ve gotten this thing under control. I will say I have been low energy and less motivated this week but I really think that has been due to stress and nothing to do with my diet. Meatless eating is really working for us.

We’ve kind of gone back to the same system of me handling lunch and Willie doing dinner…and we both handle our own snacks.

This week I made black bean and cheese burritos using Flatout Bread. I never really paid attention to the calories in flour tortillas because I don’t ever eat them. One flour tortilla in around 200 calories and that just isn’t worth it for us. The Flatout Bread option really works for us because it’s around 90 calories. I put some salsa on top and called it lunch. We have all these cookbooks but I become overwhelmed when I look at them for ideas so I really don’t look at them.  I go a little rogue so I can make this meatless eating thing work for us.  So far so good, but that has been the biggest problem.

I served this with some baked plantains (forgot the picture of this) and roasted poblano peppers.

My mid-morning snack was the quinoa tabouli. I like to make something I can make in big batches and these salads are great. Last week I did the kale salad and this week was tabouli. I’ve been eating this with some roasted garlic hummus too!

I’m not going to spend too much time talking about Willie’s meal because I don’t have the best picture because it’s on his phone and he’s at crossfit. I’m sure he’s going to do a post about it on his blog. But he made a polenta type thing and it’s delicious. It came from the Runner’s World Cookbook.  The dish resembles a lasagna without all the cheese and polenta without the noodles.  It is really good!

And my find for the week has been the new HEB greek yogurt flavors.  We’ve noticed they have been clearing the shelves of the yogurt and we thought it was going to go bye-bye.  But they were just replacing the flavors…and these flavors are good!  My favorite is strawberries and cream, but the baked apple wasn’t bad.  We also got banana pudding which was good but the bar had already been set with the other two flavors.

What are you eating this week?

Blog interrupted: a new week reset, going meatless, and biking.

I like to post the motivational stuff on Monday’s because it’s just a good way to start off the week but I’ve fallen behind on blogging because I was sick and I didn’t want to go anywhere near a computer on my work planning day. It’s kind of been a mess. I’m yet to post my recaps from San Diego or any other blog planning so this is where I’m at. The good this though is it’s Monday, a new week to do new things! It’s time to start anew and achieve new things! It’s time to start a fresh…

The case of food poisoning

The case of food poisoning

I was fine.  I was ready to roll.  I was feeling fine Monday when I returned home.  I was just really hungry and that’s what did me in.  I had some Indian food and I got sick.  It’s just a classic case of food poisoning.  I teach 5AM on Tuesday and 30 minutes before that it wasn’t going to well but I had to teach my class. It was really sad that I couldn’t give it my all in class because Willie actually came to my class.  I was too afraid I was going to upchuck on everyone so I…

Happy National Running Day!

Happy National Running Day!

It’s National Running Day! It’s no secret that I L-O-V-E to run so it’s pretty much certain I’ll be celebrating this day.  So how am I going to celebrate?  I’ll definitely go for a run with the running group this evening. If you would like to help me celebrate National Running Day you can by donating to my Team Healthy Kids fundraising efforts. A couple of years ago I posted why I run.  I can’t believe I can say a couple of years ago when talking about running.  Who would have thought this girl would be running?  I still haven’t really…

Let’s remember what Memorial Day is really about

Today we are celebrating Memorial Day! I just wanted to drop in to tell everyone to stop and think about what this holiday really means. Yes, most people are off work enjoying time at the beach or lake while eating hamburgers and hot dogs off the grill but there is a reason for Memorial Day. Many brave people gave their lives for ours and the freedoms we take for granted everyday. This is the reason for the day so let’s remember the fact that we’re pretty much free to do what we want because these people were brave enough to protect…

Fitbit Flex (and Just Dance) has me getting active again

I have a love/hate relationship with my Fitbit Flex. After Fitbloggin’ last year, I decided to get a Fitbit to help me monitor my steps and sleep patterns. Little did I know, I was going to go through three Fitbits in less than a year and these things aren’t cheap. In April, my Fitbit Flex died again on the charger and I missed it but I wasn’t going to go through the hassle of getting a replacement. FYI: Fitbit support has been very helpful in providing me replacements. It is still frustrating having this thing go out on me all of…

Fundraising for Team Healthy Kids (Action for Healthy Kids)

Supporting Action for Healthy Kids is a priority for me because I spent a majority of my life being overweight from childhood into adulthood.  I don’t want that for the future of our country.  I always say that small steps lead to big strides and this is just one of those small steps.  This is our future.  There are many health issues that are associated with childhood obesity but there are ways to stop that.  Action for Healthy Kids EDUCATES our children on healthy options and the reasons for choosing those options over others…and when to make those other choices.…

Make every moment count

Make every moment count

Hello my friends!  If you didn’t know, I spent the weekend road tripping to Kentucky to run the inaugural Horse Capital Marathon.  It was a long trip but a lot of fun. I got to catch up with an old friend AND along the way I had a lot of fun.  I’m currently still recovering for the marathon and the even longer car ride, but a recap will be coming soon. It’s Monday which means I like to give a little motivation to start your week. I didn’t know what message I wanted to convey this morning.  I took part in…

Happy Mother’s Day!

Happy Mother’s Day!

I know Mother’s Day is almost over but I wanted to pop in and say hello to all the mother’s out there in the world.  Without them, we wouldn’t be here. I spent the afternoon with my mother. She’s my hero. She’s battled cancer and is still surviving. I sometimes take it for granted that I spend every day with her when most people don’t get that chance. I am thankful for my momma every minute of the day. Two very important moms in my life: my mom and my sister! We had a family meal that included all of…

Food memory lane needs to be replaced

Food memory lane needs to be replaced

This is not the Friday post I thought I would be posting, but Willie and I were chatting this morning. It started off a little like this, “I feel like I’ve been going down a food memory lane this week.” The truth is, I have ventured into these conversations that end up talking about food. Wait!?! Am I’m missing the food of years past? I can safely say that is not the case. Don’t get me wrong, I do still have cravings for somethings but I would never cave to those cravings. It’s not worth it. The picture above in…
