Recipes: Stay healthy and indulge over the holidays

It’s coming on Christmas and there are tons of treats and foods in your face.  It’s impossible to escape.  You know I’m a big fan of moderation and deprivation.  If you deprive yourself of the things you want, you’ll probably end up binging on those foods later.  Enjoy them now with moderation and portion control. There still is a way to stay healthy and indulge over the holidays.

I will indulge during the holidays but I’m ok with it because I am keeping active. I try to keep my activities holiday themed too because it’s just so much more fun.  I’m getting exercise while still having fun.  Last week I did a Christmas light bike ride.  I don’t know how many miles we rode because it was just so much fun.

Ready to run @santahustle with @julie8228! We're totally awesome. It's all for the cookies! #santahustle #galveston #running #christmas #happyholidays

And then there was the Christmas themed half marathon.  I did enjoy half a cookie and two M&Ms.  Those aren’t really things you want to eat while you’re running in the heat.  I know, I know.  It’s supposed to be December so someone please tell me why it’s 80 degrees.

It’s just important to stay on track during this time so you can enjoy yourself without feeling the holiday guilt.  The holidays are a fun time with family and friends, don’t be bogged down in food guilt.  Honestly, food guilt isn’t healthy anyway.

Willie has been doing really great on his weight loss journey so I’ve been trying to whip up something sweet for us to eat while others are enjoying the pies, cookies and cakes.  There’s no way Willie is going to get off track so I want to make something for him to enjoy without blowing his diet.

There will be faux egg nog and pumpkin banana bread for us this year.

Pumpkin Banana Bread

Prep time:
Cook time:
Total time:
Serves: 8
Ingredients
  • 4 ripe medium bananas, mashed
  • 1/2 cup unsweetened apple sauce
  • 2 1/2 cups flour
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 4 tbsp butter, softened
  • 1/2 cup pure pumpkin puree
  • 1/2 cup splenda brown sugar
  • 2 large Egglands Best Egg egg whites
  • 1 large Eggland’s Best Egg
  • 1 tsp vanilla extract
Instructions
  1. Preheat the oven to 350. Grease a loaf pan with baking spray
  2. In a bowl, combines flour, baking soda and salt with a whisk. Set aside.
  3. In another bowl, cream butter and sugar together with a mixer. Add eggs whites, egg, bananas, pumpkin puree, apple sauce and vanilla.
  4. Beat until mixture is thick.
  5. Add flour mixture and blend at low speed until combined.
  6. Pour better into loaf pan and bake on center rack for 45-55 minutes or until a toothpick inserted in the center comes out clean.
  7. Let the pan cool for at least 20 minutes before slicing.

The egg nog is easy.  I took a gallon of cashew milk and to packages of sugar free vanilla pudding and mixed those together with a whisk.  I add a tbsp of vanilla extract too.  Refrigerate for 30 minutes before serving and whisk again before serving.  Garnish with cinnamon.

I love egg nog but it’s just not something I am comfortable with drinking.  It’s no secret I’m not a fan of drinking my calories.  This version is a nice substitute for the holiday classic and I can enjoy much more without packing on the calories.

Just remember the holidays don’t come around every year and there’s always a way to make something work for you. These are two things we’ll be enjoying this year and not be blowing our diet out of the water. And if you can’t find something to work for you, moderation not deprivation. Stay active and you won’t have anything to worry about.

Race Recap: Brazos Bend 100 – 50 Miler

Race Recap: Brazos Bend 100 – 50 Miler

This time last week I was embarking on a journey I never thought I would take.  I ran my first 50 miler at the Brazos Bend 100.  It’s ironic that I say first because when I was done I said I would never do it again.  As I write this today, there’s a little bit of wanting to run it again.  I’m not completely there yet, so don’t freak out. A large portion of our running group was running this race.  100 miles, 50 miles, marathon and half; we had all of the distances covered.  This was the group running…

The kindness of strangers

The kindness of strangers

The past few weeks I’ve been reminded on the kindness of strangers…and friends. I’ve had a lot of trying times that have left me spread thing over the past few weeks but I’ve been able to make it through with kindness. It’s hard to remember there is good in humanity. There are people who still care to make you smile. There are people out there who still want to help. There are people out there who still care. Those people may be people in your life already or just a random stranger. This past weekend I ran a 50 miler…

Video: This is how I cheat on meal prep

Hello all! I’ve been behind on everything so I took a little break from the blog to catch up on everything. I really needed to pump some videos out because I do have a goal to complete Vlogmas. The video from the other day was perfect content for the blog so I want to share it with you. I needed to make a quick trip to the grocery store to buy a few things because the house was a little bare. I thought this was the best way to show you some of my short cuts in still eating “right”…

The update on life blog

The update on life blog

I must apologize for my absence from the blog.  My life has gotten really crazy.  The responsible blogger thing would have been to stock pile post and have something already in the queue.  I like to blog organically and where as some posts are planned, I do most of my posts based on what I feel like is itching to be talked about that day.  Therefore, I haven’t been around.  Here is an explanation in this video: My mom had knee replacement surgery so any extra time I’ve had has been spent taking care of business.  The days have been…

Motivation Monday: Be present in the moment.

Motivation Monday: Be present in the moment.

I’m blogging from a hotel room on this lovely early morning and I’m thinking about all the amazing experiences I’ve had this year.  It’s been completely amazing and there has been one take back from it all. Be present in the moment. That is today’s motivation Monday message.  It’s an important message to send, especially at this time of year. It’s Thanksgiving week which means a big meal to made and friends and family gathering together.  It can be hetic and overwhelming, but it’s also meant to be a time to be thankful and enjoy the time.  Don’t forget that…

Motivation Monday: Be the best for yourself

Motivation Monday: Be the best for yourself

Hey all!  Today’s motivation Monday was sparked by a Facebook comment. I ran a race yesterday. I know you’re shocked, right?  I’ve been feeling way under the weather and I wasn’t expecting much.  The one thing I was counting on that it would be a horrible experience.  I was still sleeping 20 minutes before the start of the race. Something happened after the race that made me WANT to make this video. After I finished the race I posted this: I finished and I didn’t do horrible either. Ran the half in 2:18 and I was sick. Nice way to…

Five Things Friday: tips to avoid food temptation

Five Things Friday: tips to avoid food temptation

Halloween just passed and we’re on the cusp of holiday season.  There will be comfort foods, cakes, pies and all types of goodies being shoved in our faces all day long.  From home to work to social gatherings, the holiday season has arrived but what does that mean if you’re on your weight loss journey or just trying not to over indulge. Every year I post something similiar because every year I feel like I learn a little bit more about how tempting some foods can be and sometimes those are the foods you just can’t stay away from.  The…

We are in Runner’s World talking weight loss!

I am so happy to finally share with everyone that we are in the December 2015 issue of Runner’s World.  I guess we could have spoke about it before but honestly, we didn’t know much information about it.  When running the Pensacola Marathon on Sunday someone at an aid station stopped to ask me if I was the girl in the magazine.  That is really when I found out it had hit the shelf.  On my way home yesterday, I stopped in Baton Rouge and purchased them all. Haha! The forces at Action for Healthy Kids are making my dreams…

Orthorexia: is this a real thing?

Orthorexia: is this a real thing?

I don’t know if you read the post making the rounds about the new eating disorder: orthorexia. Orthorexia is an obession with eating only foods that are considered healthy. Apparently, only eating healthy foods is a problem. I guess it’s time for a little bit of story time. When we started the weight loss journey everything was super clean. No salt, no sauces, no resturant food but we did what worked for us. I think people thought we were going overboard at some points. I knew that, I didn’t need people to tell us that. Our biggest reason for going…

Five Things Friday: the blog blocked edition.

Welcome to this week’s Five Things Friday. I don’t know if I just have too much stuff going on right now (aka stress) or what but I can’t seem to focus on writing a blog post right now. I’ve sat down three times today to write a post and it’s just not coming. I’m blocked. I never want the blog a source of stress in my life. For today I’m going to let the blog post go. I always want to create content that you can gain something from but today it’s not happening. Instead you’re going to learn about…
