Tuna Chickpea Salad

This past weekend I took my bestie to Trader Joe’s and Whole Foods!  She had never been.  I was shocked when I found this out because I love those places.  Any health foodie loves Whole Foods, right?  Yes I know it’s expensive BUT you can find stuff in that store you can’t get most places.  It was taking kids to Disney World for us!

One of my favorite things at Whole Foods is the food bar.  Remember that kale salad I was going nuts for last year? It’s so good.  I love the food bar because you can try lots of things in a new and different type of way.  Plus, they have just the plain ole stuff if you don’t want to get fancy.

The one thing I don’t like is the pay by weight thing because some things weight a lot more than others.  We didn’t go for a meal, but we went for a little snack.  We had some really great food.  On this particular day, Willie and I both went nuts over a chickpea tuna salad.  When we looked at the ingredients list we saw it was all simple. I think Willie’s reaction was, “that’s all the stuff in that salad?”

Tuna Chickpea Salad

12 oz can tun in water, drained
1 can 16oz chickpeas, drained
1/2 small red onion, diced
1/2 red bell pepper, diced
1/8 cup chopped parsley
1 tbsp lime juice

Directions:
1. Put the tuna in a bowl and flake it with a fork. You don’t really want huge chunks of tuna in this salad.
2. Add the rest of the ingredients in the bowl and mix together.
3. You’re done!

How can something so simple be so good? This is a simple recipe that is light and refreshing. I LOVE IT! I wonder why I never thought of this before? I’ve always thought tuna salad needed to have mayo or greek yogurt to make it yummy, but this is something better!

On a side note for all those trying to lose weight or maintain a healthy lifestyle: Tuna is on my list of superfoods. You can benefit by having a serving of fish twice a week.  Tuna provides us with those healthy omega-3s along with vitamin B12, vitamin D, calcium and iron. The Omega 3 fatty acids are not produced in our bodies so we need to add them to our regular diets.

They say the simplest ingredients make the best food and this is just an example of this. Try it out and let me know how much you love it!

My veggetti experience

Last week Jes and I purchased the veggetti.  I’d seen the veggetti before but I never remembered to pick it up when I was out.  We saw a commercial for it while we were eating dinner and immediately we went out to purchase one.
