That time I burned crockpot lasagna

I love making stuff in the crockpot because it’s a great way to get a home cooked meal without all the fuss.  That was until I decided I was going to make crockpot lasagna. I was intrigued when I was fell down the rabbit hole of Pinterest and found a crock pot veggie lasagna recipe.

The great thing about the crockpot is setting and forgetting, but this time I feel like it was a little too much work. I was highly skeptical on Sunday while I was making this. I even posted on Instagram stories I wasn’t sure I would be making this again. It really depended on the final product.

I had to cook the spinach because I didn’t want the liquid from the spinach ruining the pot.  And I had to cook the meat because I thought that was the appropriate thing to do.  I am super picky about the way my meat looks and I wasn’t sure about putting ground turkey straight into the crockpot.  If it doesn’t look right, I won’t eat it.  And then making the layers was a bit time-consuming. (Maybe because we have a gigantic crockpot.)

So what’s my final verdict? I LOVED IT. I’ve been eating it all week long. I will most definitely make it again. The one thing I would do different is not cooking it so long. There were parts of it that were burned from the crockpot. It was delicious, though. I was skeptical about the noodles not cooking and that’s not really something you know until you cut it open. But it was cooked all the way.

It was so delicious I’m thinking about how I can tweak the recipe a bit. I’m thinking I might try sweet potatoes instead of the lasagna noodles. But I don’t know yet. I may have been a lot of work on the front end, but it turned out pretty well.

Meal prep this week: Maple Dijon chicken

Meal prep this week: Maple Dijon chicken

I haven’t really been talking about my meal prep on the blog lately. I know it’s bad because people want to know about the meal prep. I haven’t really talked about meal prep in a long time but that doesn’t mean I’m not doing it. Meal prep has become a little less high maintenance these days, but it’s still getting done. I’m not fancy. I don’t create recipes on my own. If I’m doing some creating, I’m just throwing stuff together we have in the fridge and making it work. There’s nothing creative happening in my kitchen. I know the…

RIP Panera BBQ Chicken Salad

RIP Panera BBQ Chicken Salad

I received some sad news yesterday sitting in the drive-thru at Panera Bread.  I ordered the same thing I’ve been eating for a while, the BBQ Chicken Salad.  Instead of hearing, please drive around, I heard some chilling news.  The salad is going off the menu.  This made my heart sink. This is my go-to order. I don’t have to wait forever in line and it’s always there when I forgot my lunch or waited too late to eat. Now it’s gone. I’m a creature of habit. I find one thing and I stick with it. I’m loyal to the…

Veggie tots, what’s the deal?

Veggie tots, what’s the deal?

If you follow me on Instagram stories (you totally should, username is webeatfat1) you have seen I’ve been trying out the veggie tots. I thought I should take one for the team so you don’t have to spend $3.50 if you don’t want to take the chance. Don’t worry, I’m going to answer the big question: I tried two versions of the veggie tots: broccoli and cauliflower veggie tots. FYI: These are not adult foods. This is a way for adults to sneak veggies to their kids and think nothing about it. I’m not saying adults won’t enjoy them, but…

Five Things Friday: finally blogging edition

Five Things Friday: finally blogging edition

I feel like I’m sneaking to blog.  It’s in the wee hours of the morning but I need to get this in.  Last week I made the mistake of blogging about nonsense and then the baby woke up so I didn’t get to finish the post.  It’s sad, but I’m already wasting time.  Let’s get with it: Running.  I’m starting to get back into it.  I’ve gone back to it and things are so much better. Granted, I’m a wee bit slower (like almost 4 minutes a mile slower) than what I use to be, but I’ll get back there.…

Do calorie counts on menus matter?

Do calorie counts on menus matter?

There’s a new trend popping up on menus everywhere.  Have you seen it? The days of having to look up the calorie counts for a specific restaurant are over because it’s right there next to the entree you want to order.  And restaurants are even pointing out their low-cal options on the menu. It’s a great thing for people who are calorie conscious and still want to eat out.  Things have changed greatly from when we started our weight loss journey. Do those calorie counts on menus matter? I know when I look at a menu and see the calorie…

Things are not normal

Things are not normal

The best blogs are the ones when you write about what you know so that is what I have to write about right now.  Things are not normal right now.  I wish I could blog about workouts, meal prepping and healthy meals, or even just weight loss.  But I can’t do that because life is just different right now. I am extremely blessed to have a child.  She is my world and I’m thankful every minute of the day.  This is definitely a place in life I never thought I would be.  Honestly, I had given up the possibility of…

Motivation to get back on track

Motivation to get back on track

It’s the holidays and people seem to get off track during this time.  For me, I’m dealing with a big event coming my way.  My focus has just been getting something in my tummy and I’ve been GREAT for the most part.  But with our little girl on the way, I’m trying to get back on track so I can stay healthy and get lose this baby weight. I’ve learned that in the past making a plan is the most effective way to accomplish a goal. It’s easier to stay focused and on track that way. I know it worked…

Do I still meal prep?

Do I still meal prep?

I’ve read the e-mails and I know people want more food stuff on the blog because it’s seriously lacking.  I have to be real, we do a modified food prep thing in our house right now.  Eating in our house has been a little lackluster and some weeks I just noticed I was wasting money on food.  The short answer to the questions is: yes.  Now he’s the long explanation: We still make our weekly trips to grocery store and I do start out with good intentions. It’s day to day with me so there are just some days I…

WIAW: A typical day of eating

WIAW: A typical day of eating

Want to know what I eat in a day? Today is your lucky day because I’m going to share. I should have shared this a while ago because a TON of people would e-mail me asking to me to make videos about what I eat in a day. I will tell you my eating habits haven’t changed much since I’ve been preggers or been on my weight loss journey. This is pretty straight on as before. I may just eat a little bit more on some days than others, AND I might want to eat some pizza little more often.…

The case of: Peanut butter and jelly oatmeal

The case of: Peanut butter and jelly oatmeal

I may not have talked about it a lot lately, but I still love oatmeal.  There was a mild obsession with it a while back that has become a full-blown obsession now. I ate oatmeal every day until I got preggers and then for some reason it has to leave my life.  I’m happy to report it’s back in my life…a lot quicker than eggs. I’ve been an oatmeal snob.  I can’t eat other people’s oatmeal unless I have the same ingredients as my special concoction, but this morning I tried something new. Introducing for the first time: peanut butter and…
