Friday Five: Things I’m looking forward to happening.

Hello!  Happy Friday! It’s time for those five things on Friday and I’m kind of stumped at what five things I should talk about this week.  Last week, I did something kind of serious and helpful for others but I think this week I want to make it a little more casual.  Without anymore chit chat, the Friday Five: I’m looking forward to happening:

Untitled

1. Enjoy the weekend.  It’s been a rough few weeks for me.  It’s been VERY stressful and I don’t think I handled things so well.  I am really hard on myself so maybe it’s not that bad but I can tell you I wasn’t the best version of myself dealing with all these emergencies.  The best news is I weathered the rocky waters and things are looking better and clearer.  Therefore, I am looking forward to enjoying the weekend.

2. Buying some new clothes. I spend a lot of time on the move at the beginning and end of the year so the only time I really relax and chill is this time right now. I’m not really worried about refreshing my look because I’ll just make due with what I have since I spend half my time at work…and the other half working out or doing something like that.  But lately I’ve been focused on refreshing the closet and getting some new stuff. And honestly, this is something I could spend a little bit more time focusing on…and organizing my closet.

Stitchfix

I got some nice stuff in my Stitchfix delivery but it was all too big.  Except for the jeans which I loved but I didn’t really have $88 to spend on jeans right now.  Plus, it’s summer and I won’t be wearing them too much right now.  I just didn’t think it was wise.  The dress I wasn’t too keen on because it’s not something I would usually wear but the tops I did love…but they were too big.

#studying for personal trainer license. I am too far removed from college for all this business bc I find it hard to focus. But I'm doing it, that is all that matters. #imagreatist #workinghatd #determined

3. Wrapping up my personal trainer certification.  I really let this go because I got busy and then I wasn’t sure if this is what I wanted.  I’m still not sure if it’s what I want.  I know I want to help people achieve what they never thought would be possible.  I know I want to motivate, inspire and coach people in losing weight and being the best version of themselves not just on the outside, but inside too. I think this is just a stepping stone to something bigger but I really need to get over this hump to get to where I want to go.  I hope to take my test in the next month during the downtime.

4. Cooking a new round of meals for next week.  I haven’t been motivated to do much lately probably due to the stress.  I’ve been going through the motions.  Hopefully this week I’ll do a better job and planning and have a little bit more fun with all of this. Even though this week’s meals weren’t bad.  I really enjoyed them so maybe a little less planning might be due.  I did have a disaster with some mustard greens this week.  The greens turned out nasty and ugh.  Definitely not a high point in the house.

Ran 4 miles this morning and did a @toneitup #beachbarre workout this evening! I'm starting to get back in the groove and having a good time. How do u get over a #workout rut? #fitfam #fitspo #fitness #tiuteam #webeatfat #weighlossjourney

5. Training, fundraising, training.  Chicago Marathon is coming up in October which means it’s time to train.  I’ve taken a couple of weeks off and I’ve enjoyed the time, but I’m ready to get back in the mode.  This week the weather has been horrible, but I’ve still gotten my runs in…even on the treadmill.  I’m ready to get outside for my long run tomorrow. I’ve also been working on strength training and just trying to get over the rut. Yesterday was a better day for me, so I’m hoping that’s a sign. But I also need to get on my fundraising for Team Healthy Kids.  I need to come up with some creative ways to raise money for this great cause.  Do you have any suggestions?

And then there’s a bonus:  It’s almost my birthday!  For the first time in a long time, I’m excited for my birthday and celebrating it.  July 2nd is the day and I plan to make the best of it.

What are five things you’re looking forward to?

Week three of meatless eating

Week three of meatless eating

Hello all! Yesterday was a crazy nuts day. Tropical Storm Bill dumped a lot of water on our city and was just a very scary and frustrating day. We can see clearly now that the rain is gone so I thought it would be best if I returned to the blog. So this is week 3 of us switching to a more plant based diet and things are going well. I’ve been worried about being low energy and not being able to really live this way because I struggled with it so much before. Now with proper research and planning,…

The time I tried the falafel waffle

The time I tried the falafel waffle

I tried to falafel waffle from the Cooking Channel commercial. Falafel is usually fried in ball form and oh so delicious. Willie and I love them but they are loaded with fat so I wanted to find a way for us to enjoy these things. I’ve seen the commercial a million times on Cooking Channel but I’ve never had enough time to attempt making it. Sunday, I had the time and this was the result. Where my falafel waffle went wrong? This probably would have worked out better with a food processor. All I have is a Ninja and it…

Healthy eating with chicken: three recipes I will …

Healthy eating with chicken: three recipes I will to try

We eat a lot of chicken, turkey and fish in our house. Red meat is limited, Willie eats it but I tend to shy away from it.  Eating lean meats is a huge part of our healthy eating plan. I’ve been trying to find some ways to enjoy chicken besides the usual ways. This week for lunch I made a chicken soup from the Runner’s World Cookbook.  I was in a pinch because I needed a meal for the week but I didn’t have enough time slave over the stove.  I needed to use the crock pot. I have to…

Eggland’s Best Eggs are nutritious

Eggland’s Best Eggs are nutritious

I love eggs! That is one thing I will never be able to deny. There’s nothing like a good omelet to start off the day…or it’s even a great way to end the day. But why is it such a great way to start the day? Because you’re meeting a lot of your nutritional needs. Omelets are great but I thought I would give my try at frittata this morning for breakfast with Eggland’s Best large eggs. I basically took everything that was left in the fridge. We had a leftover turkey burger, onions, spinach, bell peppers, roasted potatoes and…

Meal prep and the chicken

Meal prep and the chicken

Now that I have a little bit of time I’ll continue talking about meal prepping. The biggest question people talk about is what food do I cook that lasts all week. This seems to be an issue with people. I’ve never had food go back in the fridge. I cook on Sunday and I’ll meal prep for all meals until Friday. Is food going bad really a problem? Like I’ve already mentioned, I make the food and portion it out right away so every meal is grab and go. I love chicken. I eat lots of chicken. I cook it…

Sponsored: Taste the freshness with Eggland’s Best Eggs.

I do love eggs, that is not a secret.  I became very weary of eating anything but eggs whites when we started our weight loss journey.  Willie always told me that was silly because eggs were really not that bad to eat because eggs are a great source of protein and vitamins.  Come to find out, Willie was right and there’s really no need to avoid the whole egg. That is why I was so excited when I was contacted by Eggland’s Best to talk about their eggs.  Eggs don’t have to be an ingredient in your dish, it can…

Meal Prep 101: The Basics

Meal Prep 101: The Basics

*This is the first in the series of meal prepping posts I will be doing on the blog. I think it’s time for me to start my series on meal prepping. I’ve gathered the questions that were asked and I’ve put them into the categories. Where most people just want ideas for what to make, a lot of people just have some basic questions about the process. Today I will address some of the issues and challenges people have had with meal prepping. The most asked question is about keeping things in the fridge all week. Won’t the food go…

It’s the new year and everyone is jazzed about hitting the gym to workout. That’s not the only part about maintaining a healthy lifestyle.  In fact, working out might actually be the easy part because maintaining a healthy diet in a world of unhealthy convenient options can be tough. I want to help everyone master the meal prep because it’s such an important thing. You can work out all you want but if you’re…

Staying healthy while staying busy

Staying healthy while staying busy

I’ve been a little MIA this week.  It’s been a busy busy week with my full-time and part-time job.  I haven’t been doing a good job at keeping you informed with what I’ve been doing. First off, it’s launch week at the gym which keeps me busy.  That means more teaching in my schedule.  It’s kind of a bummer I didn’t have enough time to go to all the classes I wanted to attend.  I’ll just pick it up next week.  This morning I got to team teach with my buddy. She made our shirts which were so cute! I’ve…

Secret Santa and the gifts

Secret Santa and the gifts

I found myself involved in a lot of Secret Santa things this year.  It was kind of out of control, but I’m really glad that I took part in this holiday ritual.  And outside of the Secret Santa games, I got some really cool stuff that I’m excited to share with you guys.  (Warning: you may not care about the gifts I have received before Christmas.) Secret Santa gifts include: The Skinnytaste cookbook from my Fitbloggin’ group. I was wicked excited to get this cookbook. I’ve been eyeing it for a while but I never purchased it. This was definitely…
