All this egg talk had me thinking about making some eggs so this morning I made a sweet potato hash with collard greens and an egg! I’ve never made anything like this before, but I thought I would take the whole vegeterian hen fed thing and let it inspire me to create a new dish! Do you see how bright that yolk is from the egg? Last week Jes and I purchased the veggetti.  I’d seen the veggetti before but I never remembered to pick it up when I was out.  We saw a commercial for it while we were eating dinner and immediately we went out to purchase one.
