Snappy Saturday: Mug cakes and big ole salad bowls

Good morning everyone!  I hope the weekend is starting off just right for you.  Guess what I did this morning?

Good morning! #taper is a blessing and a curse but I got my miles in, now it's time to stretch. What are you doing this morning? #runchat #running #fitfluential #sweatpink #embracethespace
I ran my taper run this morning. Taper is a blessing and a curse because I’ve been on a running high (mileage) lately but now it’s time to wind that down because the 26.2 is coming soon. I wanted to run more but I stopped for many reasons. I’m kind of battling some fatigue right now too.

This week I attempted the to make my first “brownie” in a mug. It’s one of those things I don’t feel horrible about eating when I want a little extra treat in my life. I made this sucker several times. The first time didn’t turn out too well. I ended up trashing it and ate a quest bar instead. I originally made it in the mug and I didn’t mix everything together well enough.  It was a DUMPSTER FIRE! It wasn’t very tasty.  I thought about it the entire next day and I thought I would tweak the ingredients to work with what I wanted.  So the next night I wanted to try again.

The second time came out much better. I had to tweak it to work for me. This is what you’ll need:

2 tbsp oat flour
1 tbsp cocoa powder
2 packets stevia (I used Pure Via)
1/4 tsp baking soda
3 tbsp yogurt (pick your own flavor or kind. I used strawberry greek)
2 tbsp almond milk
1 larger size mug

1. Mix all the dry ingredients together in a bowl.
2. Add the wet ingredients and mix well. Make sure you get all of it mixed well.
3. Pour the mixture into a mug.
4. Put the mug in the microwave for 1-2 minutes. Time depends on the consistency. Mine was in for 1 min 20 seconds. I liked the consistency.
5. Enjoy!

This combo worked well for me.  It tasted delicious and I LOVED IT.  It’s easy to make too so it’s definitely a hit with me.

Last night I was frantically looking for a big bowl to put my salad in. Willie pulled out the normal big bowl but I told him that wasn’t going to work. I used a Pyrex bowl to eat my dinner. Willie thought that was hilarious. It worked though and my salad was soo good!

Do you think there’s something wrong with my big ole salad bowl?

Happy August! It’s time for new goals!

Happy August! It’s time for new goals!

Happy August everyone!  It’s the start of a new month which means anything is possible.  Start thinking about the things you hope to accomplish this month. Yesterday was my momma’s birthday!  It was kind of a chill day for her.  My  momma likes to celebrate occasions with food which is hard for Willie and I because we’re trying to keep things in check. We finally decided on Pei Wei.  If you’re an old blog reader you know Willie and I use to swear by this place, but they changed the menu.  For me, the nutritional information is a little bit…

Accomplished the 20 miler

Accomplished the 20 miler

This morning started off very early for me.  It’s the day in every marathon training plan people look at and think…”20 miles is a long way to go without someone cheering you on.”  Well today was my day.  Honestly, I was skeptical about completing all 20 miles in the Texas heat and humidity but I was going to give it a try. I have a couple of marathons coming up and the first one is Revel Rockies Denver.  I’m trying to run myself back into shape. I planned on being out of the door at 4am, but that didn’t happen.…

So all you do is run, right?

So all you do is run, right?

Every once and a while I get an e-mail asking me if I have “fun” because it always seems like I’m working out or running. The past two weeks have been filled with these types of e-mails so I thought this would be a great time to blog about this kind of stuff. I know it seems like I only workout or run but there is more to me than that.  This is a blog about losing 200 pounds and staying active.  My blog focus is to show people that you can do it without a fad or pill and…

Today was a better day

Today was a better day

Friday is usually a more hoppin’ day on the blog but I was MIA yesterday. It all started with a horrible rain storm. I didn’t want to drive to the gym in this horrible rain storm at 5 am because I’m afraid to drive in Noah’s Ark weather. It took me an hour to get to work because there was a major flash flood happening. When I got to work, the power was out which isn’t a good thing. I really had some pressing projects that needed to be finished yesterday. I had to wait around until the power came…

Embrace the Space: My Altra running shoes

Embrace the Space: My Altra running shoes

I didn’t post yesterday because I guess I was too busy working out.  LOL!  It’s launch week at the gym so it’s always a busy week and I like to try all the new classes too.  Yesterday I taught cycle twice and then I needed to go for a run. It was my first run since the 50K and I felt good. It got me thinking, “maybe it’s the shoes?” I think I should have worn my new shoes to the race on Saturday night. I really think it would have made a difference. A couple of weeks ago I…

Race Recap: El Scorcho 25k/50K – Why I won’t be an ultra-marathoner.

I’m late posting this morning because I was sidetracked. I hate it when that happens. On Saturday night, I ran El Scorcho. It’s a race that typically starts at midnight but if you were doing the 50K option, you had the choice to early start. You have until the sun comes up to finish the race. Why is the race at night? Because we live in Texas and it’s hot! The race seems to be pretty well organized. Packet pick up was a breeze and the ride to the park wasn’t bad either. They even had volunteers to drive you…

Work in progress

Work in progress

I am not the person I want to be, but that’s ok.  I may never be that person I want to be because once I get to where I’m going, I always see something else. I wanted to lose weight and when I did lose the weight I wanted to run a half marathon. After I ran a half marathon, I wanted to run a better half marathon. After I ran I better half marathon, I wanted to run lots of half marathons and travel the country. After I traveled the country to run half marathons, I decided I wanted…

Happy Fouth of July

Happy Fouth of July

I know most everyone is probably out watching fireworks right now but I didn’t want to not post today. Today we celebrate America! How did you spend your day? Did you wear red white and blue? You wanna know how I spent my day? It started off with a 13.2 mile run. It was hard to get me out of the door this morning but I went when I didn’t want to go. I’ve been doing my long runs on Friday because it’s just easier. I can usually go in the evenings but today I went this morning. The weather…

Today is my birthday

Today is my birthday

I’m one year older and wiser and I don’t mind!  My 20s weren’t that eventful and filled with lots of LOWS but my 30s are amazing!  For the first time I starting to live my life.  I’m starting to enjoy things and I’m definitely starting to open up.  I still have my moments of being down trodden, but I promise you those moments are FEW and far between. So what do I want to tackle in my next year in life? 1. I want to eat more froyo!  Wait, I shouldn’t do that.  I probably have too much as it…

Working, business and ghost tours in Savannah

Working, business and ghost tours in Savannah

I’m riding in the car back home father a really long day. Fitbloggin in Savannah has come to a close and I’m back in Texas. I’m not going to go into much detail right now about the conference because there are some things I really want to share with all you readers. I learned a lot of helpful things that I hope will improve your reading experience, but that will be for another time. Last night, I went on a ghost in a hearst. Savannah is supposedly the most haunted city in America. I ate a lot of great food.…
