WIAW: This week’s eats and the leftover

Hello all.  This week I’m linking up with Peas and Crayongs for WIAW to share what we are eating this week.

This week it was all about the leftovers.  I hate wasting food.  The prices at the grocery store seems to be rising so wasting the moolah on food just makes me upset.  Luckily, we had plenty of stuff leftover from last week that I was able to make new this week.  In my opinion, I think it turned out better this week.

Breakfast is always the same because I love my oats! I can’t live without them and making the eggs is so easy.

For lunch I stuffed the bell peppers with the leftover black beans from last week. I added corn and jalapenos to add volume and put the mixture in the bell peppers. It worked out really well. I also had lentils left over so I added green peas to that and put that mixture in the remaining peppers. I topped it with a tomato sauce and baked them in the oven for 40 minutes on 425. I think the peppers turned our perfect.

And I also made this carrot thing, but I forgot to take a picture of it before I started prepping it for the meals. At that point, it didn’t look pretty so this is what you get.

And I’ve been eating this salad with a meatless burger in it all week. It’s just easier for me to prep than anything else. I am going to do a blog series on snacks though because it something I am lacking in my life. I need more knowledge and I like to share what I learn with all of you.
