Saturday salad because I’m obsessed

I’ve had a mild obsession with salads lately.  I think it’s because Willie and I have been listening to food podcasts and talking about food.  In our house, endurance sports and cooking are the main topics.

So I’ve been trying to come up with some salad ideas. I’ve also been told that I’m having iron issues so I’m trying to eat more leafy greens because apparently I don’t eat enough of them. I do this though so I don’t have to take those nasty iron pills.

I present to you the baby kale and spinach salad:
Prepping for dinner. #spinach and #kale salad. #sundaydinner #eatfresh #healthyeats #vegetable #veggies #fitfluential

1 package baby spinach
1 package baby kale
1/8 cup lemon juice
1/4 cup evoo
1/8 cup dried cranberries
1/8 cup sliced almonds
Stevia, to taste
Pepper, to taste

Throw it all in a bowl and mix it together. Put it in fridge for 10 minutes before serving.

I should have used regular kale with this one because the “dressing” really overpowered the salad. This one is probably going to hit the redo, but it was still good. Willie enjoyed it and he’s not a salad man.

It’s light and refreshing and easy to make.  It’s a great choice for a summer salad.  This happened by accident but it was a welcome surprise.  There will be more salads coming at you soon.

My veggetti experience

Last week Jes and I purchased the veggetti.  I’d seen the veggetti before but I never remembered to pick it up when I was out.  We saw a commercial for it while we were eating dinner and immediately we went out to purchase one. It was a very exciting moment. I couldn’t wait to try it. So last night I tried it. The veggetti works very easily. Watch your fingers though at some points, but it’s nothing serious. Some eats from this week

I have food pictures to share which is totally unusual for me since I eat the same stuff most days. Here’s some things I’ve eaten this week. My new jam. I think this has become my favorite post race meal. The grilled chicken nuggets from Chick-fil-a are really really good. I just discovered them when we returned from China and I’m so glad that I did. These things are delicious with the fruit cup. No fries for me but they never seem to get it right. I always have to tell them I ordered the fruit cup and no fries.…

Yo Angela! Why don’t you post about food anymore?

I’ve had people ask me this in person and through e-mail.  I’m here to settle the subject.  I don’t post about my food anymore because I eat the same things all the time.  It’s not interesting.  It’s really about convenience with me.  Eating the same thing might be a little boring but I know how long it takes to make it and exactly what is in it. All this traveling has gotten me off my routine. We’re getting so close to China and I realize we’re prepared but not prepared. Happy Friday! I’m relaying this weekend.

It’s Friday!  I’m excited for the weekend and have a new experience.  This year I was invited to join a Texas Independence Relay team and I’m really excited for the experience. It’s 200 miles with my friends. We’re either going to love or hate each other by the time it’s all done! We have 11 people on our team and two drivers. Every time Willie and I end up in the media, the Facebook and e-mail messages start rolling in with people saying the same thing.  “HELP! Last night the winner of The Biggest Loser was chosen and people don’t seem to be happy.  I will admit, I don’t watch the show.  I really don’t like how the show doesn’t take it’s moment to educate the viewers on losing the weight, it strictly about the game.  In the end, it’s all about it being a reality show and game and there’s nothing wrong with that.  I know a lot of people look to show for a source of inspiration and motivation so I just wish there was just a little bit more education going on sometimes. I’ve seriously fallen behind in life since Willie has been sick.
