Some eats from this week

I have food pictures to share which is totally unusual for me since I eat the same stuff most days. Here’s some things I’ve eaten this week.

My new jam. I think this has become my favorite post race meal. The grilled chicken nuggets from Chick-fil-a are really really good. I just discovered them when we returned from China and I’m so glad that I did. These things are delicious with the fruit cup. No fries for me but they never seem to get it right. I always have to tell them I ordered the fruit cup and no fries. Do you know how hard it is to not eat those fries? But I’ve been really good at passing them up. I’m still fighting the good fight.

A good quick meal. Since we had to eat out all that time we were in China I’ve been dying to eat at home. Only hitch? I haven’t been feeling well enough to keep food down. On Sunday, I attempted to eat something besides saltines and ginger ale. I really just wanted to be able to start the week off right so I made tacos. Tacos = cheap, easy and not much to clean. The avocados were also on sale so I made some guacamole. I like avocado because it’s a good replacement for cheese. Ground turkey, black beans and grilled veggies on this low carb tortilla really hit the spot.

Willie tested out a recipe for Cooks Country.  Turkey meatballs and lemony rice.  It took a long time for him to make this but it was well worth the wait.  It was very very good.  I’m amazed at how far Willie has come with his cooking.  He’s really fancy with his food now.

Snack time.  I’ve been trying to break out of my frozen yogurt routine.  I’ve just been eating too much off it.  It’s not healthy and not easy on my pocket book.  Now I’ve been eating fruit with almond butter and maybe if I’m feeling frisky, some Puffins!  I love Puffins!

What’s the best thing you’ve eaten this week?

How important is a routine?

How important is a routine?

Do you have a routine? And how important is that routine to you? I’ve been pondering the thought of my daily routine because I’m still trying to fight getting back into my old routine. There are several good things about routines like knowing exactly what what you’re going to do every day. But routines can lead to life being bland or too boring. I like knowing that on certain days, I’m going to do a certain workout. I like not having to worry about changing that structure. I sometimes like knowing on certain nights we are going to eat certain…

A little tidbit about us on The Rachael …

A little tidbit about us on The Rachael Ray Show

There was a little update about Willie and I on The Rachael Ray Show! Apparently, we are weight loss all-stars. Here is the clip from the show: Once again, I want to thank Rachael Ray and her wonderful staff for everything they have done for us! It means the world to us to be able to share our story and keep moving in the future! We are blessed! I’m excited to see what the future will hold for Willie and I. Right now I don’t know what it is because I’m always striving to be better than I was yesterday…

Eating our way through Beijing

Eating our way through Beijing

To be honest, we were in Beijing and we weren’t really worried about eating clean.  It’s really hard to be picky about what you’re eating when you don’t speak the language and have no idea what to be asking for when it comes to food preparation.  Most meals were a victory because we navigated the system! Some places had English translations on the menu.  Others had pictures from us to choose from.  A lot of places just had menus in Chinese which meant we couldn’t eat there at all.  99% of the people didn’t speak a lick of English and…

I made macaroni salad

I made macaroni salad

I’ve been searching for something to eat instead of macaroni and cheese. Not that mac and cheese isn’t delicious, it’s just not really healthy. I’m constantly on the search for some good side dishes so I thought a macaroni salad would be a nice additional to a spring picnic. Here is what you need: 16 ounces elbow macaroni 1 cup plain greek yogurt 2 tbsp light mayo 1/2 cup dijon mustard 2 cups cherry tomatoes, halved 1 red bell pepper chopped 2 cups diced zuchinni squash 1 cup red onion diced 2 tbsp red wine vinegar Pepper to taste 1…

The best 7 minutes of my life

The best 7 minutes of my life

Folks, we’re heading to China  and the internet situation there isn’t as open as what we enjoy here.  I don’t know what kind of access I’m going to have to the internet.  I’ll set up a few posts to post while I’m away, but for the most part I’m going to be out of pocket.  Be sure to follow my instagram because I might be able to post some pictures. While I’m away I’m going to post some not so obvious strategies for weight loss and maintaining a healthy weight.  Like I’ve said many times before, I am no expert…

Hello from Beijing!

Hello from Beijing!

I’m clearly having problems with the time difference because I woke up at midnight and I was ready to go.  Willie has no problems with it though.  It’s 5:40 am right now and he’s sound asleep.  I was praying not to get out of bed before 5AM and that was hard. We arrived yesterday morning at 3:30 am.  Our flight was an hour and half early which was great.  Willie was ready to get off the plane.  I don’t know if he could have taken the full time.  It took us a long time to get our baggage event though…

The Biggest Loser Run Walk Series comes to …

The Biggest Loser Run Walk Series comes to Beaumont

Remember in February when I did The Biggest Loser Run Walk in Mobile, AL? We ended up doing that race because the Beaumont date was moved. But guess what? The series is coming to my town on May 3rd and there’s still chance for you to come! It really bums me out that we can’t do the Beaumont event because we’re in China, but that doesn’t mean you can’t enjoy the fun! Use the code WBF25 for 25% off your entry! I know it’s a little late on the timeline, but this is definitely an event you don’t want to…

It can happen to you

It can happen to you

By the time most of you are reading this post we’ll be halfway to China!  We haven’t even left the airport and we’re already having an adventure.  Let’s just say some Chinese people are looking at us with envy because we have an extension cord at to charge our phone and we don’t have to huddle around the charging station. But it’s 10:35 pm on Sunday and we’re tired.  I would have been in bed already!  We still have 2.5 hours before our flight leaves.  Willie does selfie better than me. It’s Monday so I just wanted to send a…

You can’t win them all

You can’t win them all

I started thinking about my running and the entire journey to this point. There are many battles along the way and the truth is I didn’t win them all. It’s hard to set out on a path and have everything mapped out and things don’t go the way we planned. It’s hard to come to terms with it. Sometimes things come out better than the plan but sometimes it just completely tanks. That battle is lost but you’re still a winner. I’ve been searching my soul on something to blog about for today besides my race recaps. I don’t want…

Seven Habits That Need To Be Broken

Seven Habits That Need To Be Broken

This week I’ve been focused on being positive because I’ve had a little dark cloud following me around for a couple of weeks.  Positiveness really works because this week has been so much better than the weeks that have passed.  I’m smiling, I’m happy and I’m looking forward to what the future brings…and I’ve just started to look at things differently. And then I saw this floating around Facebook the other day from Chris Freytag! I know that if I work on these areas my life with head in a positive direction everyday. All of these things are things I…
