Meal prep for the first time

Okay, so maybe it wasn’t my first time but this was the first time I’ve meal prepped this hard since early pregnancy.  But the good thing is I’m prepared for the week and I don’t have much to worry about.

Gosh, I don’t remember it being so much work but I’ve been out of practice.  I still need to get back in the habit.  Plus, I made some more “complicated” meals than normal. I tried to prep most of the meals so I wouldn’t have anything to worry about.  I’m trying to stay on track and be focused on a good diet.  The easiest way to do this for me is by having my food prepped so I don’t have to worry about what I should eat.

It actually turned out to be the best week for this kind of meal prep because my little got sick yesterday and the day was busy with trying to take care of her, get her to the doctor, and just keeping her calm. It was a long day and I totally missed lunch, but it was nice to know I had something prepped at home that was ready to eat.  I may or may not have inhaled that food without knowing I actually ate.

Enough of the personal stories, right?  You want to know what I prepped this week. I’m a bad blogger that took horrible pictures of my food this week, so please excuse that aspect.  And I didn’t actually get a picture of all the food, but that’s not going to stop me from sharing.  I must admit, I was just happy to have gotten it done.

For breakfast, I usually do something easy. I have a little bit more time in the morning so I do make my egg whites with veggies fresh every morning. I’ve been thinking about doing something I can just reheat so maybe I’ll do that next week. I also prepped my overnight oats. For the tot, she usually eats oatmeal or a waffle. I’ve been using Vans Blueberry waffles, bananas, and strawberries. She seems to need her food more instantly than I do.

For lunch:

It’s easier if we both eat the same thing with some variations on the side. For lunch this week, I made these baked ranch chicken taquitos from The Lean Green Bean. I also roasted some sweet peppers to go with it. Those were on sale this week and I thought it was the perfect opportunity to pair them with something different. I ate mine with a side salad and she had a Chobani Greek yogurt and grapes.

For dinner:
I thought I would keep it simple and eat the same thing all week. We do have salmon patties on Mondays but Tuesday – Friday we’ll be eating Pineapple Teriyaki turkey burgers. I do a mix of lean and extra lean ground turkey. (The price of EXTRA lean turkey has gone up a bit. It’s kind of disturbing.) I also made mashed sweet potatoes and green beans.

Snacks:

I made carrot oat bars because it’s a nice grab and go filling food. We just eat them plain, but you can frost them if you want. And then there are the go-tos: hummus and crackers, grapes, bananas, and applesauce. I still have a protein bar in the afternoon. Since the little is sick, she’s just been having smoothies so I guess I’ll be snacking on smoothies too.

So that is what we’re eating this week. Did you meal prep? What are you cooking? And since its summer, do you tend to change up the foods you’re eating?

WIAW: A typical day of eating

WIAW: A typical day of eating

Want to know what I eat in a day? Today is your lucky day because I’m going to share. I should have shared this a while ago because a TON of people would e-mail me asking to me to make videos about what I eat in a day. I will tell you my eating habits haven’t changed much since I’ve been preggers or been on my weight loss journey. This is pretty straight on as before. I may just eat a little bit more on some days than others, AND I might want to eat some pizza little more often.…

Meal Prep: Meatloaf all week

Meal Prep: Meatloaf all week

Hey all!  I hope you’re having a great day and enjoying the food that you’re eating.  I know I am.  I wanted to share some tips on making leftovers new again.  I know people who CAN NOT eat the same foods day in and day out.  I am not one of those people.  I am a creature of habit and it really won’t bother me to eat the same meal all week.  That’s probably why I consider meal prepping easy. I’ve been eating the same breakfast everyday for a LONG time.  Some people can’t do that so I want to…

WIAW: This week’s eats and the leftover

WIAW: This week’s eats and the leftover

Hello all.  This week I’m linking up with Peas and Crayongs for WIAW to share what we are eating this week. This week it was all about the leftovers.  I hate wasting food.  The prices at the grocery store seems to be rising so wasting the moolah on food just makes me upset.  Luckily, we had plenty of stuff leftover from last week that I was able to make new this week.  In my opinion, I think it turned out better this week. There is video: Here is a closer look at what we prepped this week: Breakfast is always the same…

The loaf that fell apart and mixed greens recipe

On Sunday, we actually had time to prep out some meals.  It was nice being able to do that so I guess it’s fine the weekend was pretty uneventful. I’ve been dying to make a curried lentil loaf for a few weeks now, but I never had enough time to actually make one or I didn’t buy the right stuff from the store.  Basically bad planning kept me from making a lentil loaf. Here’s a video showing a little of the meal prep this week and I give you tips!  Watch for the tips! So what exactly is the lentil…

Eating all natural with Healthy Choice

Eating all natural with Healthy Choice

Last week Willie came home with something new but I didn’t pay much attention to it. The past two weeks of meals have been filled with Healthy Choice steamers because there just wasn’t enough time to prepare lunch. This was the next best option for us. From previous posts you know we are big fans of these meals and Willie noticed the company added on with Simply Cafe Steamers. Before I get started, I just want you to know I was not paid or compensated for anything I’m saying right now.  This is just a normal daily thing in our…

Introducing this week’s lunch: Meatloaf with a recipe.

Happy Labor Day everyone! I’ve been hosting some friends this weekend so Sunday setup has come into Monday! I know you’re all dying to know what I’ve decided to make for lunch this week. I’ve decided on meatloaf. It’s important to get started on the meal prepping for the week right now if you haven’t. There’s still time for you! So why meatloaf? I can make one big pan of it and it will last the entire week for the two of us. Willie doesn’t like the abundance of ground turkey/chicken that we have around the house, but it works…

Happy Late Friday from the road

Happy Late Friday from the road

I’m a bad blogger, I didn’t post anything at all today. I have a good excuse, I was driving in the car all day. It’s Ruben Studdard Celebration weekend which means I’m gearing up for the 3rd Annual Magic City Half Marathon. I am looking forward to the race even though it’s supposed to be really COLD.  I’m trying to decide if I’m actually going to run this race or just have a good time.  To try to PR or not?  I AM supposed to be in taper! I wish I could say I am having a good day but…

Everyone wants to know what we eat for lunch

*This post is not sponsored or paid for by any entity.  It may seem like we are pushing Healthy Choice meals here, but we’re not.  This is just something we found and loved on our weight loss journey.  You will always be notified before reading a post if it is paid and/or sponsored. This is the most frequently asked question from blog readers and every day people. I wish I could share something amazing with you, but just don’t have it to share.  I cook two meals a day most days and lunch really isn’t one of those meals.  I…
