Foodie Friday: Let’s make some chili!

I haven’t been eating very balanced lately. Ever since I’ve come back from Denver I really haven’t been eating…correctly. I haven’t had a taste for anything so I’ve ended up eating things like oatmeal for dinner or just peanut butter roll ups. Those aren’t the worst things in the world, but they definitely aren’t the best. This week I decided to get back on track and the easiest way for me to get a balanced plate of food was to make CHILI! I love fall because this is my favorite thing to eat and with the time changing this weekend, it’s officially that time!

Things you need:

1/2 cup green bell pepper chopped
1/2 cup red bell pepper chopped
1/2 cup white onion diced
1/2 cup white mushrooms chopped
2 cloves garlic, minced
2 tbsp chili powder
1 tbsp cumin
1 tbsp tomato paste
1/2 tsp red pepper flake
1/2 tbsp oregano
1 tsp salt
1 tsp black pepper
1 tsp cinnamon
1 tsp stevia
1 14 oz can fire roasted tomatoes, drained
1/2 cup low sodium chicken broth
1 package frozen chopped spinach
1 can GOYA low sodium kidney beans
1 can GOYA cannelini beans
1 lb extra lean ground turkey (optional)
3/4 cup roasted corn (optional)

What to do:

1 In a large pot, cook the onion and bell peppers over medium high heat, stirring, until golden, about 5 minutes. Add the garlic, chili powder, cumin, and red pepper flakes and cook, stirring, for a minute or two more.

2 Add tomatoes, tomato paste, stock. beans, oregano, salt, pepper, and cooked turkey meat (optional). Add the entire block of frozen spinach and let it heat up and break apart in the mixture. Stir it a a few times to make sure the spinach is breaking up in the chili. Bring mixture to a simmer and reduce heat to low. Simmer, uncovered, for an hour.

3 Salt to taste. Add 1 to 3 teaspoons of stevia to take the edge of the acidity of the tomatoes if desired.

4 If using the roasted corn: I roasted frozen corn in the over on 450 degrees for 40 minutes. I added it in when the chili was ready to serve!

5 Enjoy your homemade chili

Makes 5-6 servings of 1/2 cup portions of chili. The first night we just had chili with rice, last night we cut up some potatoes for homemade fries and put the chili on top with cheese and onions! The possibilities are endless here. Think chili cheese fries, nachos (with pop chips), burritos (made with flatouts or whole wheat tortillas) or just eat it straight up in a bowl. It’s delicious!

Do you like your chili with beans or meat or both? I use to only like meat chili but since we started our lifestyle journey I love beans! I would make chili without beans but Willie likes meat too much!

Quinoa is great and one of my favorite things to eat. I eat a mostly plant based diet so quinoa is a great way to get my protein.
