WIAW: Look inside our fridge & eating animal protein again

It’s another Wednesday which means it’s time for WIAW (What I Ate Wednesday). I’m trying to do different things with food post so this week I’m taking you inside of our fridge. This way I can show you what we’re eating.

Willie and I have switched off our vegetarian diet for one very good reason. We were coming up protein deficient because it became harder and harder for us to find the foods we needed in our city. The egg shortage has become a big issue and there was never any tofu at the store. Our main grocery store stopped selling tempeh and I was never able to get my hands on any seitan. It was just getting very difficult and it became a huge stressor in our lives.

I don’t eat that much meat in the first place. I didn’t feel any different with or without meat so that is always a plus. I did take a bit longer to recover from my last big race which really had me a bit concerned. I was trying to adjust to a plant-based diet during a lull in race season while training for a marathon but I think I kind of just hit the wall.

Availability was the biggest problem in our situation.

So what have I been eating?

Lunch @peiwei with @fueledxrunning. I had the #thaidynamite with tofu. It was kind of spicy! What are you #eating? #lunch
We returned to Pei Wei for lunch this past weekend and it was delicious. I had the Thai Dynamite with tofu and veggies.

And Willie made some ground turkey meat sauce that we’ve been eating over veggies…and I had a salad. This picture has proved to me that I need to stop using the plates I had in COLLEGE and use the nice dishes my grandma purchased us for our wedding. I’m a weirdo, I know.

I’m lacking on the food pictures this week, but I’ll do better next week. I promise.
