Celebrate National Egg Month with great food.

May is National Egg Month and it’s time to celebrate.  As you know, I’ve been really jazzed about eggs and how Eggland’s Best Eggs have been transforming my diet.  Living a healthy lifestyle is important and eating these farm fresh eggs (produced in your area and delivered to your local store to stay fresh) makes meal and snack time really great.  Last month, I transformed snack time by switching from a processed snack to real food that included a hard-cooked Eggland’s Best Egg.

I’ve been thinking a lot lately about not just eating food, but eating the right foods.  It’s important to eat food packed with nutrition and not just the empty calories.  This is something I will talk about later but I wanted to say my outlook on food has changed greatly since I started with Eggland’s Best eggs. I refocused on looking at the labels and being knowledgeable about all the other things that go into food too.

Whenever I eat an Eggland’s Best egg I’m getting all the nutrition I need to keep me going through the day and some pretty tough workouts.  Hello!  I’ve been running A LOT of marathons lately. I’ve been trying out some new stuff in the kitchen with eggs myself.  I really want to incorporate eggs into meals besides breakfast. I already made the sweet potato hash a few months ago, but I wanted to try some other things too.  We’ve been on a pizza kick lately and been making the stuff at home.

I experimented with egg pizza.  It was really good. A runny yolk is always great. We made our pizza on a pita and just loaded it up with some really great things. Willie was pleasantly surprised at the outcome. It’s good for breakfast, lunch or a snack! It’s a new twist on pizza and protein on pizza.

Baked Oatmeal with Eggland's Best Eggs.
I made this baked oatmeal for a breakfast or a dessert. It really tastes like peach cobbler. The egg isn’t the main event here but it still uses those farm fresh Eggland’s Best eggs. It’s bread like and I used peaches because it’s getting close to summer. I made a mistake with the salt because it’s a bit salty but not enough to ruin the dish. Word to the wise: make sure you really mix those ingredients!

And we can’t forget about snack time.

I made this sliced egg, tomato and mashed sweet potato toast on Ezekiel bread! Toast the bread and just start stacking. Lots of colors and packed with lots of nutrition. The egg is the star but it blends so well with the other flavors. I think this is the perfect snack!
