Hello all! Yesterday was a crazy nuts day. Tropical Storm Bill dumped a lot of water on our city and was just a very scary and frustrating day. We can see clearly now that the rain is gone so I thought it would be best if I returned to the blog.
So this is week 3 of us switching to a more plant based diet and things are going well. I’ve been worried about being low energy and not being able to really live this way because I struggled with it so much before. Now with proper research and planning, I think we’ve gotten this thing under control. I will say I have been low energy and less motivated this week but I really think that has been due to stress and nothing to do with my diet. Meatless eating is really working for us.
We’ve kind of gone back to the same system of me handling lunch and Willie doing dinner…and we both handle our own snacks.
This week I made black bean and cheese burritos using Flatout Bread. I never really paid attention to the calories in flour tortillas because I don’t ever eat them. One flour tortilla in around 200 calories and that just isn’t worth it for us. The Flatout Bread option really works for us because it’s around 90 calories. I put some salsa on top and called it lunch. We have all these cookbooks but I become overwhelmed when I look at them for ideas so I really don’t look at them. I go a little rogue so I can make this meatless eating thing work for us. So far so good, but that has been the biggest problem.
I served this with some baked plantains (forgot the picture of this) and roasted poblano peppers.
My mid-morning snack was the quinoa tabouli. I like to make something I can make in big batches and these salads are great. Last week I did the kale salad and this week was tabouli. I’ve been eating this with some roasted garlic hummus too!
I’m not going to spend too much time talking about Willie’s meal because I don’t have the best picture because it’s on his phone and he’s at crossfit. I’m sure he’s going to do a post about it on his blog. But he made a polenta type thing and it’s delicious. It came from the Runner’s World Cookbook. The dish resembles a lasagna without all the cheese and polenta without the noodles. It is really good!
And my find for the week has been the new HEB greek yogurt flavors. We’ve noticed they have been clearing the shelves of the yogurt and we thought it was going to go bye-bye. But they were just replacing the flavors…and these flavors are good! My favorite is strawberries and cream, but the baked apple wasn’t bad. We also got banana pudding which was good but the bar had already been set with the other two flavors.
