Recipe: The Apple Pizza

This recipe is part of the Apple Three Way Series. The apple pizza isn’t meant to be fancy.  It’s meant to be easy.  I used PB2 again in this recipe because I had it on hand AND it’s something I don’t have to worry about the calories or fat from the peanut butter. You can use peanut butter instead of the PB2 though.  It’s up to you!

Also, these apple pizzas are great because you can customize to what you want.  Some people may want shredded coconut on them.  Others may nuts or apple butter or raisins…or all of that.  It’s completely up to you.  This is always a great way to get the kids in your life involved in the healthy snack making.  Kids will love it because they can personalize it to what they want.

I did use a mandolin to cut my apple slices.  If you don’t have one of those, you can slice by hand.  Watch your fingers though. You didn’t see it in the video, but I also melted the chocolate chips on these apple pizzas.  I didn’t put that part in for some reason.

Like I mentioned before, this recipe was inspired by my best friend who prefers green apples and has a love for chocolate.  This was just a simple thing to make.  I hope you enjoy making these apple pizzas too.

Ingredients
  • 1 Granny Smith Apple, cored and sliced
  • 2 tbsp of PB2 mixed or peanut butter
  • Chocolate chips, to taste
  • Honey, to taste
  • Whatever other ingredients you want
Instructions
  1. Core the apple
  2. Slice the apple.
  3. Put down your glue (PB2, peanut butter, cream cheese).
  4. Add your toppings.
  5. Eat up.

It’s like an apple pie but in a quesadilla form.  It’s a nice twist and it’s super easy.  If you have a panini press, this would be great.
