It’s meal prep Sunday! I hope everyone had a great weekend. I haven’t been a productive human today. I enjoyed the peace and quiet in my house and napped on the couch and then watched the Cowboys lose a football game. This game was not a good look for my Dallas Cowboys, but I will still root them on.
I haven’t been blogging so I know that you’ve missed my meal prep post. These posts are helpful not because you want to see what I’m eating, but so you can have different ideas on what to cook for your own meal prep. I always find it helpful to see what other people are whipping up in the kitchen because I am a creature of habit. I will eat the same thing week after week and not think twice about it.
I’ll keep it simple and to the point.
Breakfast used to be my JAM! I used to be really excited about it but now I’m just meh about it. Just because it’s not my favorite meal of the day doesn’t mean I don’t eat it. I’ve just been trying to keep it simple. I’ll have an egg and egg white spinach scramble and some oatmeal. I haven’t done overnight oats in a long time. I think I may have experienced a bit of burn out on them, so I’ve been eating these thinkThin protein oatmeals. I’ve only had two flavors: Berry Crumble and Honey Peanut Butter, which is a favorite. I chose this oatmeal over other varieties because the calories are something I’m comfortable with and the type of oats. These packs contain a whole grain blend rolled oats, steel cut oats, and red quinoa. I like that it’s not just quick oats or rolled oats.
My lunch game is still pretty simple. I do use these frozen Healthy Choice Meals and Lean Cuisine meals almost every day. It’s just easier to have it in the freezer and eat this with some added broccoli. I’m trying out some new Healthy Choice meals this week. I always add some steamed broccoli to every meal I eat. No one ever died from eating more veggies and it’s just an easy way to amplify the meals. I do love the Lean Cuisine meals but this deep dish pizza is my favorite. And just to be transparent, I’ll probably eat these meals with a side of tater tots I made in the air fryer.
The salmon is part of the dinner. We haven’t been eating enough fish in the house. Let’s just say we had a bad experience with something from the fish counter a couple of months back and it hasn’t been reintroduced back into the house until now. We will give it a try and I’ll let you know how it turns out.
Did you know I got a pressure cooker last month? I promised never to get one because I read all the horror stories, but then I then all the recipes starting rolling out. I saw how everyone was making all this fancy food in ONE POT in LESS THAN A HOUR. Anything that will save me time is something I need to have. I need food that is quick to make and that is one reason why I’m ok eating the same thing week after week. The pressure cooker has changed my world because we are now eating new things. It’s been great.
This week we are having beef stew. I found a recipe and gave it a whirl today. The prep time on these meals is probably longer than the time it takes to cook. I tasted it and it’s legit good. I’m sure it will be good all week long. We made it with sweet potatoes instead of regular potatoes because that’s just the kind of life we live. This would also be a good freezer meal to heat up later. I thought it would be a great alternative to chili which is a go-to cooler weather meal. I am just trying to mix it up.
That is what is on the menu this week. Simple, easy, and healthy is what I’m going for to stay on track for the new year.
