Avocados and strawberries, a quick bread recipe

I’ve been on a mission to make something different with an avocado for a little contest.  I didn’t want to do something savory because I felt like everyone was going to be doing that.  I wanted to do something with an avocado that people wouldn’t think about using it for.  I thought there would be lots of deviled eggs or salads so I wanted to go the opposite route.  I tried on Sunday with an OK product.

For some reason I was intrigued by an avocado and strawberry combination. I really wanted it to work!

It turned out OK but it wasn’t great. I wanted to make a bread with the avocados. I used oat flour with this recipe but it just didn’t come out the way I wanted. I also made the mistake of not mashing the avocados good enough. Willie was a little afraid to try it, but he did and he liked it. It said it was different but in a good way. The avocado taste kind of just blended right in. I also used coconut oil which left this a little greasy IMO.

Yesterday I decided I would try again, because I wanted to rectify some of the issues I had before. This time I made sure to get some apple sauce.

This one turned out much better and looked the way I imagined it to look. The quick bread is so moist and delicious.

Here’s what you need:

1 ripe banana, mashed
1 cup strawberries, chopped
1 California avocado, mashed
1/2 cup unsweetened apple sauce
2-1/2 cups unbleached all purpose flour, or a flour of your choice
1-1/2 tsp baking soda
1/2 tsp salt
1/2 cup splenda brown sugar blend
1/4 cup egg whites
1 tsp vanilla extract
baking spray

Here’s what you do:

Preheat the oven for 350 degrees.

Combine the mashed banana, mashed avocado, apple sauce, egg whites, brown sugar and vanilla extract in a bowl.

Combine all the dry ingredients together: flour, baking soda, and salt.

Add the wet ingredients into the dry ingredients and mix together but be sure not to over mix. The mixture might be a little thick, but make sure everything is combined.

Fold in the strawberries into the mixture.

Pour mixture into a loaf pan and bake for 40 mins or until cooked through. Use the toothpick test.

It’s simple and easy. It turned out really great. The one thing I would change is adding nuts. I think it would be better if there was a little crunch in it. I hope it’s something everyone will try.

This weekend is pretty big. My little brother is graduating high school this evening. It makes me feel so old, but I’m so happy. And then I’m running a race on Sunday morning!

I have food pictures to share which is totally unusual for me since I eat the same stuff most days. Here’s some things I’ve eaten this week. My new jam. I think this has become my favorite post race meal. The grilled chicken nuggets from Chick-fil-a are really really good. I just discovered them when we returned from China and I’m so glad that I did. These things are delicious with the fruit cup. No fries for me but they never seem to get it right. I always have to tell them I ordered the fruit cup and no fries.…
