I’ve been on a mission to make something different with an avocado for a little contest.  I didn’t want to do something savory because I felt like everyone was going to be doing that.  I wanted to do something with an avocado that people wouldn’t think about using it for.  I thought there would be lots of deviled eggs or salads so I wanted to go the opposite route.  I tried on Sunday with an OK product. For some reason I was intrigued by an avocado and strawberry combination. I really wanted it to work! It turned out OK but… View Post

I’ve had a mild obsession with salads lately.  I think it’s because Willie and I have been listening to food podcasts and talking about food.  In our house, endurance sports and cooking are the main topics. So I’ve been trying to come up with some salad ideas. I’ve also been told that I’m having iron issues so I’m trying to eat more leafy greens because apparently I don’t eat enough of them. I do this though so I don’t have to take those nasty iron pills. I present to you the baby kale and spinach salad: 1 package baby spinach… View Post

I’ve been searching for something to eat instead of macaroni and cheese. Not that mac and cheese isn’t delicious, it’s just not really healthy. I’m constantly on the search for some good side dishes so I thought a macaroni salad would be a nice additional to a spring picnic. Here is what you need: 16 ounces elbow macaroni 1 cup plain greek yogurt 2 tbsp light mayo 1/2 cup dijon mustard 2 cups cherry tomatoes, halved 1 red bell pepper chopped 2 cups diced zuchinni squash 1 cup red onion diced 2 tbsp red wine vinegar Pepper to taste 1… View Post

I’ve been sick but I’m trying to get on the mend quicker so I can run my second marathon in 6 days on Saturday.  I’ve been overloading on vitamin C and medicating up.  The Gusher will be my first TEXAS marathon and I’m glad to say it will be run in my hometown!  Things are looking better but on Monday I decided to make some veggie soup. Here’s what you need for the soup: 1 package of frozen chopped spinach 1/2 white onion, diced 1 red bell pepper, diced 1 green bell pepper, diced 2 stalks celery, diced 1 cup… View Post

I’ve been trying to come up with great veggie side dishes because that’s mostly what I eat.  People seemed so focused on the meat main event, but I’m not a huge meat eater.  I do prefer my meat on the side because I classify myself as a flexitarian. I would probably not eat meat if I wasn’t so adamant about running but I feel like I need it to keep my body strong and injury free. Anyway, I got an idea for the corn succotash after being on The Rachael Ray Show so I made a couple of modifications.  It’s… View Post
